Job description
The challenging profession of chef offers you a wide range of job opportunities. At the USB, you can expect the exciting working environment of a large company in communal catering, where you will learn how to prepare and cook food. This covers the entire spectrum - from incoming goods to food storage (in strict compliance with hygiene guidelines, of course). You will work in a rotation system in the positions of saucier (meat, sauces), entremetier (side dishes, vegetables, soups), cold kitchen and patisserie. The focus is always on the different needs of our customers and ensuring that their diet is as healthy as possible.
The catering area at the University Hospital Basel ensures that meals are prepared in a contemporary way, based on the principles of healthy nutrition and the various needs of customers. These include patients, visitors, guests attending events at the hospital and employees of the University Hospital. Every day, 800 patients are catered for and around 1500-2000 meals are produced for employees.
Incidentally, in 2018, the University Hospital Basel fundamentally realigned its patient catering and became the first hospital in Switzerland to switch to the MicroPast® method. We are now state of the art! We still cook for our employees using the conventional method.
Training process
During your training as a chef, you will work in a rotation system, i.e. you will be in the following positions for around three months at a time:
- Patisserie
- Saucier (meat, sauces etc.)
- Entremetier and Micropast (side dishes, vegetables, soups)
- Cold kitchen
Theoretical lessons take place one day a week at the Allgemeine Gewerbeschule in Basel.
During your training at the USB, you will have the opportunity to get a taste of the various catering establishments and external partners, such as the Teufelhof restaurant or Grand Hotel Les Trois Rois.
There are inter-company courses for all apprentices: These are 10x 2 course days spread over the 3 years of apprenticeship. These are organized by Hotel & Gastroformation Basel-Stadt.
Prerequisites
- You have completed compulsory schooling (level A - grade 5 in mathematics/German or level E)
- You enjoy working with food and cooking
- You are resilient in hectic situations
- You have a good sense of taste and smell
- You have robust health (as a chef, you mainly work standing up)
- You have a high level of quality awareness and a sense of order
- Strong awareness of hygiene
- You are guest and team-oriented - loners are out of place in the kitchen
- You can organize yourself well
Vocational baccalaureate
The vocational baccalaureate complements your basic vocational training with an extended general education. It gives you access to a university of applied sciences FH.

After completing your apprenticeship, you have the opportunity to complete further training to become a dietary chef, head chef or chef de cuisine.
